Welcome everyone to this milestone journey of experience. First of all, I express my eternal gratitude to @alexanderpeace mam for organizing this special and diverse culinary journey. In today's expedition, I welcome you all to the world of pulao rice khichdi, cooked with four types of pulses and various vegetables.
Task 1:- Preparation
There are some cuisines that are deeply in tune with our culture and Bengali tradition, including the Sanatan (Hindu) religion. So here I will share this special cooking skill step by step in a great preparation.
Names and materials of the required products.

| Mustard seeds 10 grams | Water 300 ml |
Here, first I peeled the potatoes, tomatoes, beans and sweet pumpkin well. Then I peeled and cleaned the onions, garlic, coriander leaves and green chillies. Then I chopped the onions, chillies and garlic nicely on the cutting board. Then I chopped the necessary vegetables. I mixed the rice and lentils together well. I washed them well with clean water and drained the water in a colander.
I am displaying all the vegetables, including onions, green chilies, here as clean cooking ingredients.
Then I added oil to the pan and after heating it well, I added the onion, green chili, and garlic ingredients.
Next, I added all the ingredients like turmeric salt, mustard seeds, cumin salt, etc.
Then I added all the necessary ingredients including potatoes, sweet potatoes, beans, carrots, and mixed them well.
Here I have mixed all the necessary ingredients well again and added the coriander leaves.
Then I added 300ml of water to the pan and mixed it well. Then I added the polao rice to the pan and mixed it again with the vegetables. Then I put the lid on and lightly heated it for 20 minutes. I mixed it once more in between. Then I reduced the heat of the stove and after five minutes I took the pan off. You can see that it is cooked.
This time, I have taken the curry off the stove and am trying to show you all how to make the vegetables look beautiful. Let's follow the final steps.

Task 2:- Cultural Connections
Especially here, the combination of four types of pulses and vegetables along with various spices creates a great connection with Bengali culture. This Khichuri with Panchmishali in Bengali style is very delicious to eat and highlights Bengali tradition among everyone. This Khichuri tradition is also in different places in the country and abroad. However, this Khichuri with vegetables is interesting as a culinary culture in Bengali tradition and culture.
This special and attractive Khichuri is usually a traditional Bengali winter and monsoon cooking dish, and we also enjoy eating this vegetable dal Khichuri together during Iftar celebrations.
For example, turmeric powder, soybean oil, mixed spices, vegetables, and polenta, along with rice, are the unique foundation of Bengali cooking.
Along with this, in traditional (Hindu) religious festivals, this vegetarian tradition and culture are usually preserved. This special vegetarian food is suitable for many people to eat at once. On special occasions including Durga Puja and Saraswati Puja of Hindu religion, vegetarian Khichuri is prepared. I saw such a scene when I went to the house of a Hindu friend of mine. However, they complete the tradition of this culture without onion and garlic. The special Khichuri is very similar to the Prasad cooking method.
Task 3:- Unity & Shared Humanity
This food is unique and traditional even in various formalities. The collective family members enjoy eating this food together in unity and tradition. This delicious food is made with onions, green chillies and all the necessary ingredients, which adds unity and sharing of taste.
Especially in Asia, everyone, including the rich and poor, loves to eat this food. Along with this, this Khichuri food tradition is a symbol of social customs and traditions. In the past, rice and pulses were usually produced in large quantities. And other current products or vegetables were not available. At that time, cooking curry was a difficult matter. So at that time, vegetarianism was the only way to fill the stomach. Together, all the ingredients were nutritious and this food created a bond of unity. However, at that time, this vegetarian food was a unique source of tradition to provide nutrition to the hungry.
Despite the differences in culture, this food is a staple of cooking in a domestic environment. For example, when it rains, everyone becomes crazy about eating khichdi at home. This food is also important in disaster, cyclone and flooded areas. Moreover, this special food is very traditional at a low cost to curb hunger. This special food, which is used to fill the stomachs of thousands of people, creates a great bond between everyone with common humanity.
