Welcome to my belog,how are you all .I am @ roohiasif99 from Pakistan.I hope everybody fine too.Today here I am participating here wonderful contest which organized by @ Alexandra peace.really food can represent country's culture and tradition.Today I will share with you a famous dish of Arabic culture called " kabsa"And the specialty of this dish is that it is cooked in a single pot.

Let's move towards and starts

Things we need

Green cardamom3
Cumin seeds1 tsp
Saffron1 pinch
Kewra water1 tsp

Ginger garlic paste2 tsp

Procedure with step by step

Wash the chicken properly in water .chopped the onion in thin slice.

Take a pen add in oil .when heat the oil in pen add chopped onion frying only 3-4 minutes.after that add in chicken.

Chicken frying with ginger,garlic paste then add lemon,tomato pury and 2 tsp of yougrt.mixed all the ingredients and add 2 glass of water untill the chicken cooked 80%

On the other hand soak the rice in water for 20 minutes.

When the chicken stock is ready. I add rice in same pen .

.there is no need to add water chicken stock is enough . The rice will cook well in this water, when the water dries up,

Add zaffron in kewra water and add top of the rice and coved it in slow heat.

Finally, when the kabsa was ready, I heated the coals well on the stove and placed them in a small bowl, adding a spoonful of oil to create a smoky flavor.And I placed this bowl in the center of the rice and covered it tightly for ten minutes.

This is my final presentation.its very delicious,juicy and yummy .As soon as I dished it out, its aroma spread throughout the house.I served with salad and riyta.

Task:2 cultural back ground

This is Arabic dish.It is cooked eaten with great enthusiasm in Saudi Arabia and other Gulf countries.It is made with great enthusiasm at feasts and festivals.its cooked beef,mutton,lamb,camel meat ,chicken with rice.And this dish is considered a symbol of brother hood love and unity,Hospitality.

Origin of this dish

This dish spread through various Arab tribes that migrated from one desert to another desert Which were called Bedouins. .These animals were also accompanied by cattle, and they cooked this meat, rice, and spices together in the same pot, which is why it is called one pot dish(.The reason was that they had few resources and little water, and the effort was to cook quickly and all at once in one pot.)In this way, the dish gradually became part of the culture and became famous.And so this dish slowly spread throughout the Arab countries.

This dish is similar to our Pakistani dish chicken pulo

Difference between both the dishes

chilies and spices are added to chicken pulao.

While Arabic dishes kabsa only add strong spices.That's why it produces a very delicious, strong, extra spicy flavor.not used green chilli,red chilli,dry chilli.That's this dish feel light and soft,when eaten.

To make pulo tomatoes, yogurt, lemon, and plum are added for sourness.Any one to two ingredients are enough for a pulo

While Arabic kabsa dry lemon must added(I didn't have dried lemon this recipe, so I used half cup of lemon juice.) Excess used of lemon .This is a characteristic of this dish that sets it apart from other dishes in giving it a sour flavor.
Smokey flavour enhance the taste of kabsa.

Hello friend,

Your dish looks appetizing. I love the clear steps you took in preparing it and it has a similarity with our popular Nigerian jollof rice. Although you have not used tomatoes, I guess that's the only thing missing out.

Arabic kabsa! I have seen so many time in other's blog, they are eating Arabic kabsa and finally you shared the recipe. I will try to make this recipe at home and let you know the taste. Best wishes!

I have heard the name of Arabic kabsa before but have never tried it. You have presented the food in such a wonderful way and also highlighted the cultural background. From which we will all benefit. Your tutorial is excellent. After watching your tutorial, now I can easily make Arabic kabsa. Thank you for the wonderful presentation and I wish you success in this challenge.
