Required materials.
A nice and well-organized list of ingredients required to make light and nutritious khichdi at home is given below in a table form:
| Serial No. | Ingredient Name | Quantity |
| 1 | Fragrant rice | 2 cups |
| 2 | Lentils | 1 cup |
| 3 | Mung beans | 1 cup |
| 4 | Chopped onion | 2 tablespoons |
| 5 | Chopped green chilies | As needed |
| 6 | Ginger and garlic paste | 2 teaspoons |
| 7 | Salt | As needed |
| 8 | Turmeric powder | 1/2 teaspoon |
| 9 | Chili powder | As needed |
| 10 | Coriander or cumin powder | As needed |
| 11 | Whole cumin seeds | As needed |
| 12 | Cinnamon | As needed |
| 13 | White cardamom | As needed |
| 14 | Cloves | As needed |
| 15 | Bay leaves | As needed |

👨🍳 The preparation method for Light and nutritious khichdi recipe (step by step) is given below:
| Step 1: Mix rice and lentils together and prepare. |
✔ First, I cleaned a certain amount of rice and lentils in separate bowls. Then, I put the rice and lentils together in a large bowl and mixed them well, so that the rice and lentils were prepared in the right proportion for the khichdi.
| Step 2: Wash and soak the rice and lentils |
✔ At this stage, I washed the well-mixed rice and lentils several times in clean water to remove any dirt inside. Then I soaked the washed rice and lentils in enough water to soften them and cook them quickly and nicely during cooking.
| Step 3: Boil and fry the onions |
✔ Now, I first put a pan on the stove and heated some cooking oil in it. When the oil was hot, I lightly fried the bay leaves, whole cumin seeds, cinnamon, cardamom and cloves in it to release a beautiful aroma. Then I added the chopped onions and fried them on medium heat, stirring until the onions were lightly browned and soft.
| Step 4: Grinding the spices |
✔ After lightly frying the onion and coriander, I added ginger-garlic paste and salt to taste one by one. Then I added turmeric powder, chili powder and coriander/cumin powder with a little water and ground the spices very well, until the oil floats to the top and the raw smell of the spices disappears.
| Step 5: Mixing rice and lentils and adding water |
✔ Once the spices are ground, add the previously washed and soaked rice and dal mixture to the pan. I fried the rice and dal with the spices for 2-3 minutes very well, so that the spices stick well to the rice. Then I added the required amount of hot water (a little more to soften the khichdi) and mixed all the ingredients well by stirring. Finally, I covered the pan with a lid and let the khichdi boil on medium heat.
| Step 6: Add the green chillies and keep the khichdi aside. |
✔ When the khichdi started boiling and the water dried up a bit and the rice and dal were half cooked, I added the chopped green chillies to it. Then I reduced the heat to low (smothered) and covered the pan. I cooked it for a while longer, until the khichdi was completely cooked, soft and chewy, and the water dried up completely. Keeping it at this low temperature further enhances the taste and aroma of the khichdi.
| Step 7: Sprinkle coriander leaves and prepare to serve. |
✔ At this stage, when the khichdi is completely ready and before turning off the stove, I sprinkled a generous amount of freshly chopped coriander leaves on it. Then I covered it with a lid and left it for 1-2 minutes, so that the beautiful aroma of coriander leaves blends well with the khichdi. That's it, my family's favorite, very tasty and nutritious soft khichdi is ready. Now it is ready to be served hot.
Final presentation of my recipe
✅ Alhamdulillah, finally, after going through all the cooking steps, a very comforting and nutritious soft khichuri was prepared for my family. I have arranged the khichuri in a beautiful bowl for serving, which not only looks tempting, but is also very comfortable and suitable for eating on a sick day.

✅ Tell us why you make this recipe specially when you or someone is sick at home?
When I or anyone in my family is sick, it is absolutely impossible to eat heavy or oily and spicy food. And especially at that time when our body is tired and weak, the digestive system does not want to digest normal food easily. This simple soft khichdi is very light, nutritious and easily digestible. It comforts the stomach, brings warmth from within the body and works great to provide quick energy. So this simple recipe is our family's main hope to restore the taste in the mouth and get back on the path of health during the days of illness.

✅ Share memories what your mother did make for you when you sick? Any special drink that make you perfect.
Whenever I was sick with fever, cold or any other reason, my mother would make soft khichdi with her own hands and feed it to me. Along with that, there would be a little lemon juice and a thin broth. The comfort and love of that first bite of my sick body from my mother's hand is still etched in my mind.
Also, on the days of illness, hot ginger tea made by my mother was a magical drink for me. Whenever I had a cold or a sore throat for some reason, my mother would make a light hot tea with ginger and a little lemon juice. As soon as I drank that cup of hot tea, my heart would immediately fill up and my body would feel much stronger. Even today, when someone in our family is sick, I make these foods and drinks remembering my mother's care.
