To make sabudana payes, first I wash the sabudanas well with water. Then I soak them in a little milk for 15 minutes. If I soak them in milk, there will be no problem in draining the water when the sabudanas swell later. I can pour the swollen sabudanas directly into the hot milk.
Step- 2

|---|
Then I will heat one liter of milk on the stove. When the milk starts to boil, I will add bay leaves, cardamom and cinnamon. This will spread a beautiful aroma in the sabudana payes.
Step- 3

|---|
Once the milk boils, I will add the soaked sabudana to it. Then I will keep stirring the sabudana until it boils. If I do not stir continuously, the sabudana may stick to the bottom of the pan, which will completely ruin the taste of the payas.
Step- 4

Then sabudana is fully cooked and has the right consistency, I add 1 cup of suger and mixed well together.
Step- 5

When the sabudana is fully cooked and has the right consistency, I sprinkle some nuts and raisins on top. Then I remove it from the stove and serve the delicious sabudana payes.
When I am healthy and normal, I don't like to eat sweet food very much. But when I am sick, my mouth becomes completely bitter. I don't know if it happens to everyone? But I get very bitter. So I can eat a little sweet food in this sick state. Although I don't like it when I am healthy, but when I am sick, I can accept this sweet food as my only food. Since it is easy to make, I try to make this Payes item with pulao rice, sabudana, and semolina.
When I was little, my mother used to make me some kind of food item like payas or sweet. Especially when I was little, we used to eat bread and milk mixed with sugar together. Sometimes I would eat it just by mixing milk and jaggery. Basically, when I was sick, I preferred sweet items more than salty items. Because it helps to give my body strength. Besides, I can finish these payas items quickly and I don't need to chew much.
I would like to invite participate:

In making Sabudanar payes, the method of soaking it in a little milk at the beginning is great instead of soaking it in water. This way, there is no hassle of draining the water, and it can be poured directly into boiling milk. You have highlighted the issue of stirring the payas continuously so that it does not stick to the bottom while cooking. It is very normal for the mouth to become bitter when you are sick. At such a time, you do not have to chew much, so you can eat soft and sweet foods very easily, and it also gives the body quick energy. I think that making this kind of light sagudana payes is not only easier than eating heavy food when you are sick, but also quite comfortable for the body. The memory you wrote about eating milk-roti or milk-jaggery from your mother's hands when you were sick as a child will match the childhood of many. Thank you for sharing a wonderful recipe. Best wishes to you in this contest. 😊
