Welcome to Steemit Challenge Season 32 week#2 of The Kitchen Diaries!. First of all I would like to thank @steemitblog for giving me this opportunity.
Introduction
I’m honestly so excited to start this 6-week journey with all of you in The Kitchen Diaries. For me, cooking has never just been about following a recipe or mixing ingredients in a pot. It’s about the smell that reminds you of your childhood home, the small creative choices you make when you’re short on time, and the stories that quietly live in every kitchen table and family meal.
This season, each week will bring a new theme for you to explore and make your own. Some will push you to be resourceful, others will pull at your memories, and a few will just be about having fun with food again. I can’t wait to read your stories, see your photos, and discover the unique ways you turn simple ingredients into something meaningful.

Grandma’s Recipe Remix
“Grandma’s Recipe Remix”. Some flavors are not just food, they’re memories. For me, it’s my grandmother’s handi that would be on the stove every Friday. The smell of her special daal and that slow-cooked masala… I can still close my eyes and remember it. She never used measuring spoons, everything was “andaazan(approx)” — a pinch of this, a handful of that.
This week we are honoring that tradition, but adding our little twist because times change and kitchens change too. I learned the base recipe from her, with love and patience, and now I cook it my style — maybe a bit less oil, maybe a new ingredient that my kids enjoy. Because food evolves, but the love behind it stays the same.
I share a recipe that’s part of my family history and part of me. Let’s keep traditions alive, but make them taste like home today.
My Recipe
For today's contest I'm making "Brain Masala" that i learned from my aunt and she learned from my nani (grandmother). I'm sharing this recipe in my style.

| Red chilli powder |
| Turmeric powder |
| Coriander powder |
| Black pepper |
| Salt |

| Green chillies |
| Coriander leaves |
| Ginger piece |
| Yougart |
first boil brain for 6-7 min and remove it's membrane and threads at surface of brain. It is most important step before cooking it. It removes smell of brain.
Add oil in a pan then sotey garlic ginger paste in it. When aroma of garlic and ginger arises add chopped tomatoes , fried onions and green chillies in it and sotey it for weekly mintutes.

- Add dried spices, yougart in it and cover it for few mintutes until tomatoes become soft and all ingredients incorporate nicely.

- Now add brain in it and mixed it well with other ingredients by chopping it in pan. Stir it continously, I use less oil but slightly more oil gives it more taste and aroma.

- After cooking 5-6 minutes brain masala is ready to serve. Garnish it with Coriander leaves, Ginger piece and green chillies.
