INTRODUCTION
About melon Soup
Egusi is a West African name for the seeds of plants like squash, melons, and gourds, it is a protein-rich seeds of cucurbitaceous plants,
when it is dried and ground, it becomes a staple ingredient in many West African dishes. Particularly, in Nigerian culture, egusi soup can be enjoyed with popular pounded yam, semovita, fufu or even Harri(cassava flax) like what I used in eating mine is garri . These seeds are rich in fat and protein and other essential nutrients.
Nigerian Egusi Soup is a soup thickened with ground melon seeds and contains leafy and other vegetables. It is one of the most popular soups prepared by most tribes in Nigeria with considerable variation and can be prepared with goat, beef, fish, or shellfish depending on your choice.
As a mother who understands the value of being economical in managing the family's resources, I prepared this food with the least amount of ingredients for a pot of soup that will serve my family of 5 up to 2 times. Please follow along and see how I prepared it.
INGREDIENTS

From the picture above, starting with the fresh tomatoes and moving clockwise,
- fresh tomatoes 8 medium sizes
- onions, 1 medium size
- grinded melon, 2 cups
- seasoning cube, 1 knor cube
- grinded crayfish, 1 hand full
- salt, to taste
- stock fish pieces, 8
- goat meat, 1/2 kg
- Palm oil, 200ml
- fresh pepper, to taste
- pumpkin leaf
PREPARATION
The preparation is very simple and can be prepared by anyone.
Step 1
Getting the ingredients ready
- Soak the already grinded melon in water, just let the water cover the melon, then set aside
- wash the meat thoroughly and put in the pot, use hot water to wash the stock fish and add to the meat. Then I seasoned them with stock cube, salt, onions, a little ginger, garlic and turmeric. And cook till tender, add the quantity of water that will be enough for the soup. Allow it to cook very well and then set aside

- wash and cut the pumpkin and set aside
- slice tomatoes and pound a little and then set aside.
IT IS TIME TO PREPARE THE SOUP
step 2
Place the dry pot on fire and add Palm oil, when it is a little hot, add salt and onions, fry a little, then add the diced fresh tomatoes and fry for about 7 minutes.
- add the melon and fry till the water dries. Then add the stock along with the water and cover to cook till 10 minutes depending of your fire.
This was when I added the melon

- add grinded crayfish, check for salt and pepper and make sure they are to taste.
- the last thing to add is the pumpkin leaf, I turned it and allowed it to cook for just 3 minutes, the soup is ready.
Step 3
The next thing I did was to boil hot water and used it to make my cassava flacks.
This is the garri swallow and melon soup

From all I spent to get this simple but delicious soup and swallow ready, it all amounted to 1700NGN and that is a total of 3.4 steem at 500NGN per steem. Very economical. I spent 1650NGN for the soup and just 1/2 of garri for me. Thank you all for going through my post.

I definitely will try this version with tomatoes. I have never used garlic and ginger in preparing soup before. My soup is loading 1%...Thanks for this recipe.

I wonder how it will taste but if it tastes like it looks in your pics, then I definitely will try and prepare it next time I prepare egusi soup.
Question; must I pound the tomatoes or can I just slice it and use it like that?.
