Have you ever wondered what makes Nigerian and Ghanaian Jollof Rice different? This is probably the biggest food debate in West Africa and today I decided to settle it once and for all. I cooked both from scratch and I am ready to give you my honest verdict!
🇳🇬 Nigerian Jollof Rice
Nigerian Jollof Rice is known for its deep red color, bold flavor and that famous smoky taste we call "party jollof." Here is what I used:
Ingredients:
2 cups long grain parboiled rice
4 plum tomatoes
2 red bell peppers
2 scotch bonnet peppers
2 onions
3 tbsp tomato paste
2 cups chicken stock
Curry powder, thyme, bay leaves, seasoning cubes, salt
How I made it:
I blended the tomatoes, peppers and onion together then fried the paste in oil for about 20 minutes until the raw smell disappeared. I added my seasoning and stock then added the washed rice. I covered it tightly with foil and a lid and cooked on low heat for 30 minutes. The secret step? I turned the heat up at the end for that smoky bottom crust. That smokiness is what makes Nigerian Jollof legendary!

🇬🇭 Ghanaian Jollof Rice
Ghanaian Jollof is lighter in color, fluffier in texture and more subtle in flavor. Here is what I used:
Ingredients:
2 cups long grain white rice
3 fresh blended tomatoes
1 green bell pepper
1 onion
2 cups chicken stock
2 tbsp tomato paste
Salt and pepper to taste
How I made it:
I blended the tomatoes, green pepper and onion then fried the mixture in oil until it thickened. I added the stock and seasoning then added the washed rice. I covered and cooked on medium heat for 30 minutes until all the liquid was absorbed. The result was fluffy, light and very clean tasting rice.

The Verdict — Side by Side
Looking at both dishes side by side the difference is clear. Nigerian Jollof is deeper red, smoky and very bold and rich in flavor. Ghanaian Jollof is lighter in color, fluffier and more subtle and delicate in taste.
If you want bold, smoky and deeply flavored rice — Nigerian Jollof wins.
