Every single day after school the first thing waiting for me was a hot steaming bowl of Bitterleaf Soup and Eba. No fancy restaurant, no snacks — just that one meal that made everything feel right again.
To this day nothing else comes close to that feeling.

Ingredients
For the Bitterleaf Soup:
Fresh or dried bitterleaf (well washed)
Assorted meat (beef, tripe, stockfish)
2 cups palm oil
2 tbsp ground crayfish
2 stock cubes
Pepper and salt to taste
Cocoyam paste (for thickening)
For the Eba:
2 cups garri
Hot boiling water
How To Cook It
Bitterleaf Soup:
Boil your assorted meat with seasoning until tender
Add palm oil and allow to heat through
Add cocoyam paste and stir until soup thickens
Add crayfish, pepper and stock cubes
Add the washed bitterleaf and stir
Cook for 10 minutes and taste for seasoning
Your soup is ready!
Eba:
Boil water in a pot
Pour garri slowly into the hot water
Stir continuously and fold until smooth and firm
Wrap and serve hot alongside your soup
The first spoonful takes me right back. Back to that small girl dropping her school bag, running to the kitchen and sitting down to the best meal of the day. No five star restaurant has ever made me feel the way this bowl of bitterleaf soup and eba makes me feel.
