That sounds like a great side to almost any dinner. I like my bacon on the less-crispy side, but bacon on top of anything is good.
Did you do this as a main dish, or was it a side to the meal?
We served this as a side. If it were to be a main dish, we might add some hard boiled eggs or chicken and serve it on a bed of greens!
