Cravings often prompt individuals to make online food orders. In India, particularly during the rainy season, there is a strong preference for enjoying pakoras in the evening. While they may be referred to as fritters in English,
homemade pakoras provide a superior culinary experience.

Unfortunately, when pakoras are ordered online, they frequently arrive in a soggy condition,
diminishing their appeal. Therefore, I would like to share a simple yet protein-rich recipe that effectively satisfies evening cravings.

If you are prepared to proceed, let us not delay any further—let us explore the process of creating these delightful snacks together.

This recipe is not only straightforward to prepare
but also guarantees safety as it is prepared at home. Below are the ingredients
required for making pakoras or fritters.

PREPARATION METHOD:-

STEP 1:-
To begin, it is imperative to wash the lentils several times until the water runs clear. Following this, the lentils should be soaked for approximately one hour.

It is advisable to monitor the soaking process, and to determine if the lentils are adequately prepared, one should take a single lentil and attempt to break it with one’s fingernails. If the lentil breaks apart easily,
it is suitable to proceed to the next step of processing in the mixer grinder.

STEP 2:-
In a chopper;
chop onion and green chillies! Also grate ginger and set aside!

STEP 3:-
Now, add soaked red lentils in a mixer jar and coarsely grind them;
Then take them out in a large bowl and keep aside!

STEP 4:-
Subsequently, incorporate the chopped ginger, asafoetida, nigella seeds, and turmeric powder, ensuring that all ingredients are thoroughly mixed. It is important to refrain from adding salt and onion at this stage, as both contain water that may render the batter excessively runny. (This serves as a practical cooking tip.)
Please cover the bowl and allow the mixture to rest for a minimum of 10 minutes. This step is essential for ensuring proper incorporation of the flavours.

STEP 5:-
After a duration of ten minutes,
place a pan on medium heat and add oil to it.

I recommend using a minimal amount of oil for shallow frying;
However, if deep frying is preferred, an increased quantity of oil should be utilised. Once the oil reaches a sufficiently high temperature and begins to emit smoke,
incorporate the chopped onion and salt into the mixture, and subsequently reduce the heat before commencing the frying process.

STEP 6:-
Please fry all fritters until they achieve a golden colour, as shown in the accompanying image. Serve the fritters hot, either with ketchup or, as I personally enjoyed them, with thecha.
