Hello Everyone!!!

Food has a way of showing up at the same table even when people come from different sides of the world. For me, that food is grilled chicken.

It’s not fancy. It’s not rare. But I’ve seen it bring people together in Nigeria, in Ghana, and even when I watched videos of friends in Brazil and Lebanon doing their own version of it. That’s why I chose it for this week’s theme: unity through food.

Task 1: Preparation (3 marks)


Ingredients:

Chicken750g
Garlic ginger paste1tbsp
Chilli powder1.5 tsp
Saltas per taste
Whole spice1tsp
Yougart4tbsp
Orange food color1/2tsp

Making:

  • Put all spices in a bowl, make its paste with yougart and mixed it well.

  • Make deep cuts on chicken so all spices can penetrate in it well. Marinate it for 2-4hrs for good taste.

  • After 4 hrs grilled it on charcoal/ oven / stove . Cook it from all sides by changing it's sides.
    When chicken gets tender and has good colour it done.

Task 2: Cultural Connections

The connection between West Africa and the Middle East is facilitated by grill chicken.

Grilled chicken at parties, Sunday dinners and street corners in Nigeria and Ghana. It is marinated in local peppers, onions (black pepper), ginger and spices and cooked on slow-grill over charcoal. People are prompted to leave just by the scent.' Although it is commonly known as grilled chicken in Ghana, the spice blend and serving technique give it a distinct flavor. The approach and the soul are identical.

Shiish tawook can be found in Lebanon as well. The identical concept - chicken strips marinated, barbecued on grills. The marinade changes from garlic, lemon and yogurt to za'atar before being served with pitum and garlic sauce. Various names and spices are used, but the act of gathering around a fire with shared plates remains unchanged.

Chicken, fire, garlic and onions; peppers; oil are the common ingredients. » The common practice - cooking for others, eating with hands on and talking long after the plate is full.

Task 3: Unity & Shared Humanity

A passport is not required for food, as demonstrated by grilled chicken. The. It travels with people. The West Africans adopted their grilling approach during their migration. They were also brought to Africa by Lebanese traders.. Over time, the lines blur.

The dish demonstrates that we are more connected than we might assume. While a Nigerian family grilling chicken in Lagos and pursuing shish tawook in Beirut are different, they both understand the same moment - sitting by the fire, listening to stories, and eating together.

That's unity. Rather than eliminating disparities, but finding the point of convergence. Chicken that has been grilled is one of those places. It's a reminder that people have always been united by fire and food, regardless of their nationalities or accents. This is one of the oldest ways to say "you're welcome here.".

This dish is personal for me because it’s what my friends and I make when we want to sit, talk, and forget about everything else for a few hours. It doesn’t matter where you’re from. Once the chicken hits the grill, everyone leans in.

Pasta with chicken in Neapolitan-style sauce is a wonderful dish. The dish connects Italy with Latin America and Asia. A wonderful culture has been created through food. You have said it well that food migration enriches the world, new dishes are born. As well as new flavors are created.
