Assalamu Alaikum, I hope you are all well, Alhamdulillah I am also healthy and well. I am very happy to participate in the Second week of Steemit Engagement Challenge Season 33. This week's theme is "SCS-33 "From My Kitchen To Your Plate" Week #2 My City My Taste" And a big thank you to @suboohi ma'am for organizing such a beautiful competition. Our city is a festival of countless flavors, and at the center of that flavor story is our beloved biryani. In today's competition, I have come before you with my own homemade "Chicken Kachchi Biryani". Kachchi Biryani means a special festive atmosphere, which spreads a strange tranquility in every corner of my kitchen. Cooking for me is not just preparing a meal, but a living expression of childhood memories and beautiful moments spent with family. So let's get started...!!
𝙏𝙝𝙪𝙢𝙗𝙣𝙖𝙞𝙡 𝙞𝙢𝙖𝙜𝙚

Required materials.
The secret to this chicken kacchi biryani is its spices and cooking method. Here is my own recipe for this biryani:

| 2 | Basmati Rice (Fortune Biryani Special) | 1 packet (about 1 kg) |
| 3 | Potato | Moderately chopped (Biryani Potato) |
| 4 | Chopped Onion (Kuchi) | 1 bowl for beresta |
| 5 | Ginger and garlic paste | 2 teaspoons |
| 6 | Green chillies | 7-8 pieces |
| 7 | Sour curd | 1 cup |
| 8 | Liquid milk or cream-like ingredients | As per quantity |
| 9 | Almond and cashew paste | As per quantity |
| 10 | Whole Garam Masala | Cinnamon, Cardamom, Cloves, Cumin, Jai and Bay leaves |
| 11 | Biryani Masala | 1 packet of cooking masala |
| 12 | Salt | As per quantity |

👨🍳 The preparation method for Chicken Kacchi Biriyani recipe (step by step) is given below:
| Step 1: Making the onion paste |
✔ I first put a pan on the stove and heated it with enough oil. Then I added a quantity of chopped onions to this hot oil. Now, on medium heat of the stove, I fried the onions by stirring them well until they turned golden and brown. When the chopped onions are nicely fried and become crispy, I drained the oil and put it in a bowl through a strainer.
✔ For the Kachchi Biryani, I prepared the potatoes that I had cut by mixing turmeric and spices in a bowl. Now I put the spiced potatoes in hot oil and fry them well until they turn light golden and soft. When the potatoes get a nice color, drain the oil and keep it in a bowl.
| Step 3: Washing the chicken with water and marinating process |
✔ I first took more than 1 kg of chicken leg pieces in a bowl and washed the meat thoroughly in clean water. Now, I added a quantity of sour yogurt to this washed meat, which will help make the meat soft and juicy. Then I added a quantity of ginger and garlic paste. Finally, I mixed the special spice paste or ingredients prepared to enhance the taste and aroma of the cooking with the meat and prepared it for marinating.
| Step 4: Final marinating of the meat by mixing spices |
✔ At this stage, I added more packaged biryani masala and the pre-fried crispy onion paste to the meat. Now I mixed all the spices, yogurt, ginger-garlic paste and paste very well with the meat using my hands. After mixing well, I left the meat to marinate for about 1 hour to mix with the spices.
| Step 5: Preparing and Soaking Rice |
✔ I cut the 1 kg packet of basmati rice and poured it into a large bowl. After pouring the rice into the bowl, I washed it thoroughly in clean water. After washing the rice thoroughly, I soaked it in enough water for 30 minutes, so that the rice would be neat and long during cooking.
| Step 6: Preparing water for boiling Rice |
✔ First, I put a large pot of water on the stove to boil the rice. Then I added various whole spices like bay leaves, cinnamon, cardamom, cloves, and cumin to the water. I even squeezed some lemon juice into the water, which helps to make the rice fluffy and fragrant. Now, I added some oil and salt to the water. Mix all the spices, lemon juice, and salt well with the water and bring the water to a boil.
| Step 7: Boil and drain the rice |
✔ At this stage, I poured the basmati rice that had been soaked in hot water with spices into the boiling water. Then, the rice was boiled in boiling water until it was 80-90% cooked. The time of cooking the rice in the pot was carefully monitored to ensure that it was perfectly cooked. Now, after 80-90% of the rice was cooked to the desired level, I took it out of the pot, poured it into a strainer, and drained all the hot water.
| Step 8: Placing the meat in the pan and cooking |
✔ Now I put a large pan on the stove and heat it with enough oil. Then I pour the chicken pieces that have been marinated in spices into the hot oil in the pan. After putting the meat in the pan, I cook it well on medium heat, so that the spices penetrate into the meat and make it soft and tasty.
✔ Now, the golden potatoes that have been fried in advance have been beautifully arranged on top of the cooked meat. A layer of neatly boiled rice that has been drained through a strainer has been spread evenly on top of the potatoes. A sufficient amount of crispy onion slices have been spread on top of the rice layer, which will bring a wonderful aroma and taste.
| Step 10: Add food coloring, ghee, and salt. |
✔ At this stage, I sprinkled ghee on the rice for flavor and milk mixed with food coloring for a beautiful color. Then, I added some whole green chilies to create the final look of the biryani. Then, I sealed or covered the pot with a lid. Now, I placed a tawa on the stove and placed the pot on it and simmered it on low heat, so that the flavors of all the spices blend with the rice to create a perfect smoky biryani.
| Step 11: Breathtaking and Final Look |
✔ After covering it with a lid and keeping it for 40-50 minutes, the biryani cooking process is successfully completed. Now, when you open the lid of the pot, a wonderful aroma spreads from inside. After opening the lid of the pot, you see a perfect combination of perfectly cooked rice, meat and potatoes, which makes your mouth water. Now it is completely ready to serve!
Final presentation of my recipe
✅ Alhamdulillah, finally the delicious Chicken Kachchi Biryani is ready. The magical aroma that spreads throughout the house after taking the pot off the stove is mind-blowing. Now I can't wait any longer—it's time to enjoy this piping hot Kachchi Biryani with the whole family!

Our city Dhaka and its surrounding areas are well known all over the world for its traditional and delicious food. However, every alley here is like a food trial zone. The 4 popular and famous dishes of my city are mentioned below:
1. Kachchi Biryani: Our Dhakaiya Kachchi Biryani makes our tongue water. Especially, this Kachchi made with a unique spread of fragrant basmati rice, soft meat and delicious potatoes is a traditional royal dish of our city.
2. Bakarkhani: Bakarkhani is a very historical and popular snack in our old Dhaka. Its crunchy taste goes well with hot tea or meat broth every morning or afternoon.
3. Hajir Biryani: The traditional Hajir Biryani of old Dhaka has been associated with the emotions of people in our Dhaka for decades. Its special flavor and the taste of meat fried in pure ghee are truly incomparable.
4. Tehari: Tehari in mustard oil, filled with the aroma of small pieces of meat and green chilies, is another very popular and beloved dish of our city.

Food in our city is not just a means of satisfying hunger, it is a deep reflection of our culture, history and social bonds. The cultural importance of a city's food is immense, because:
Bearer of tradition and identity: The traditional foods of our city have been carrying the identity of the culinary art and culture of our ancestors for ages. Foods like Kachchi Biryani are an integral part of our culture.
Festivals and gatherings: The real joy lies in sharing steaming food while sitting together during Eid, weddings or any family celebration. These events further strengthen our mutual relationships, sincerity and hospitality.
Social bonds: Food binds people together. Sitting at the dining table with the whole family on holidays or special occasions or savoring delicious food while chatting with friends enlivens our social life.

Excellent recipe; it is very similar to our Venezuelan version of arroz con pollo, a very typical dish from my country.

I noticed one thing in your recipe—the process of separating the rice and boiling it for 80-90% to retain the original taste of the kacchi and then letting it steam is the real trick to this recipe. Usually, when making kacchi with chicken at home, many people overcook the meat or the rice becomes soft. However, marinating it for an hour with spices and using lemon juice and whole spices with the rice will help to enhance the freshness and aroma of the rice. And I completely agree with the cultural importance of old Dhaka food that you have highlighted. Bakarkhani and mustard oil tehari are truly a unique tradition of our city. Especially the combination of potatoes with kacchi, without which the real flavor of Dhaka food would remain incomplete. Overall, you have beautifully illustrated each step of the recipe.
