Dish preparation steps

	Ingredients for the dish

• Veggies
• Palm-oil
• Chicken
• Pepper
• Crayfish
• Onions
• Chicken stock
• Water

Steps

• Wash the veggies with salt and water.

• Slice the veggies into tiny sizes and put into a pot.

• Place on low heat to get cooking.

Veggies ready to cook

	Add onions to the veggies

• Add crayfish, chicken stock, pepper, and cover.

• Add the cooked chicken.

• Finally, add palm-oil and salt to taste.

• Combine all ingredients together and cover to cook for 2 minutes.

• Our delicious vegetable soup is ready!

Popular City Taste

This is a popular dish in my city called “Edikakong soup”. For this soup, it's main ingredients are the vegetables. The mixture of different leaves brings a great delight to the dish. With all it’s proteinous contents, the dish is highly recommended for healthy eating.

We often pair this soup with garri, fufu, rice or pounded yam. It is a great Nigerian identity.

Another one is Porridge plantain. For this dish, plantain is sliced into cubes and mixed with some ingredients to make a porridge. We all believe plantain is full of iron and then so good to the body when combined.

Among all the ingredients are; smoked fish, periwinkle, palm-oil, crayfish and veggies to coat it.

The next one is “vegetable rice”. This dish is absolutely popular in my city because of its richness. This dish is specially prepared with palm-oil, crayfish and dry fish.

It is a local dish, that brings joy each time it is prepared. It is easy to prepare and also affordable.

This is “Egusi soup” with an amazing delight. This dish is popular everywhere in my city and mostly cooked in homes. The dish is garnished with various proteins and and other elements that makes it rich.

Cultural importance

Vegetable soup is more than just a meal in Nigeria. It is a symbol of our rich cultural heritage and agricultural abundance. The green color on the Nigerian flag represents the country's fertile land, where different vegetables such as ugu (fluted pumpkin), waterleaf, spinach, bitter leaf, and scent leaf are grown.

These fresh vegetables are the main ingredients in many traditional soups enjoyed across the country. Although every ethnic group has its own style of preparing vegetable soup, but they all share the same purpose which is bringing people together.

Vegetable soup also reflects the white color on the Nigerian flag, which symbolizes peace and unity. Families often gather around the table to enjoy the soup with different swallows, creating moments of love, and togetherness. Beyond its cultural value, vegetable soup is highly nutritious. It provides vitamins, minerals, and fiber that promote good health, making it an important part of the Nigerian diet.
