◉✿✿🍲 Step 1️⃣: Preparing the chicken and drumstick curry✿✿◉

First of all I washed and cleaned the chicken well. Along with this I peeled Tindy. Washed them well and cut them into thin slices. So that they would cook quickly and mix well in the curry. I also peeled the onion. And cut it into large slices and prepare it. After that I placed the pot on the stove. And added oil to it. When the oil was hot. I added the onion cut into large slices. And fry it on low heat for about five minutes. When the onion started to turn light golden and soft. I added a generous spoon of ginger garlic paste. And continued to fry it for another two to three minutes. Which made the aroma come out more.

◉✿✿🍲 Step 2️⃣: Prepare the spice by adding tomatoes✿✿◉

After the onion and ginger garlic paste is well roasted. I chopped the fresh tomatoes and added them to the pot. Then I mixed the tomatoes well with the onion. And started cooking on low heat. I kept stirring the spoon so that all the ingredients were combined. And the tomatoes started to soften by releasing their moisture. After a few minutes the tomatoes started to decompose. And their flavor started to be absorbed well with the onion and ginger garlic. I let the spices cook further. So that a thick and fragrant base is prepared. Which plays an important role in making the curry taste more delicious.

When the onion tomato and ginger garlic paste is well cooked. And became a fragrant and thick condiment. I added my favorite desi spices to it. These spices included turmeric red chilli chili flakes and salt. These are simple and traditional spices that are often easily available in our homes. Or can be prepared by grinding them at home. I usually do not use many spices in curries. Because I like simple and balanced flavors. With the help of these few spices. The curries not only become delicious. But also do not feel too heavy. After adding the spices I mixed them well. So that their color aroma and taste are evenly incorporated into the entire condiment.

When all the spices were added. I added a little water and started roasting them well. Adding water helped the spices to blend together and their flavor came out more. I kept stirring the spices so that they roasted well. And the fragrant oil started separating from them. When the spices were completely ready. I added the washed chicken to it. After adding the chicken roast it well with the spices for about seven to eight minutes. So that the flavor of the spices was absorbed into the meat. At this stage the color of the chicken also started to become beautiful. And the aroma of the curry started to feel more appealing.

When the chicken is well roasted with the spices. And its color started to turn light to gold. I added the Tindy that were previously washed and cut into thin slices. After adding the Tindy I mixed them well with the chicken. So that the spices were evenly applied to each piece. After this I roasted the chicken and the Tindy on low heat for about five more minutes. With this process the Tindy started absorbing the flavor of the spices. And their aroma also mixed well with the chicken. At this stage the curry started looking very fragrant and delicious. Which gave an idea that this is going to be a delicious homemade dish.

When the chicken and the Tindy were well roasted in the spices. And all the ingredients were well absorbed in each other's flavors. I added water as required. The amount of water is kept such that the chicken. And Tindy were easily cooked and the curry gravy is also suitable. After this I mixed all the ingredients well and covered the pot. And left it to cook on low heat. After cooking slowly for about fifteen to twenty minutes. The chicken became soft and the Tindy were also well cooked. And the aroma of the curry spread throughout the house. Finally my delicious fragrant and tasty chicken and Tindy curry is ready.

◉✿✿🍽️ Serving Style✿✿◉

After the salan is ready. I served it with soft and fresh roti baked in a hot oven. Along with this meal. I also prepared salted raw milk lassi. Which not only cools the body in the summer season. But also provides refreshment. That is why I often include lassi in lunch. Apart from this I also prepared a salad of fresh cucumbers garnished with lemon juice. Which further enhanced the taste of the food. The combination of this delicious chicken and Tindy curry. Cold lassi and fresh salad turned into a complete balance. And a very tasty lunch. Which everyone ate with great enthusiasm and liked it very much.
