Tilapia fish soup with kanchakala in the busy life of expatriation
Good afternoon friends, how are you all? After a lot of busyness and fatigue in the mechanical life of expatriation, when you cook a familiar dish of the country with your own hands, it feels like a piece of Bangladesh is floating before your eyes. After a whole day of hard work, being able to cook a little to your heart's content and eating with satisfaction is the greatest peace at the end of the day for expatriates like us. Today, on a holiday, I made such a familiar and simple recipe - tilapia fish curry with kanchakala.
The joy of cooking this common dish of our country while sitting in the soil of expatriation is different. The entire preparation method of cooking is summarized below:

First, I washed the tilapia fish pieces well, marinated them with a little turmeric and salt. Meanwhile, I peeled the fresh kanchakala nicely, cut them into small pieces and soaked them in water so that they do not turn black due to dryness.

I heated a sufficient amount of oil in a pan and fried the pieces of fish, which were rubbed with turmeric and salt, until they were lightly browned. The familiar aroma of frying fish in a kitchen abroad immediately reminded me of the kitchen at home.
After frying the fish, I fried the chopped onion, garlic, and sliced raw chili in the remaining oil in the pan until they were lightly golden. Then, I added the chopped green plantains, which I had finely chopped with a little turmeric and other necessary spices. I stirred the green plantains with the spices for a while and then added the required amount of water.

When the broth boiled, I added the previously fried tilapia fish pieces on top. Boiled it on a low heat for a while and when the broth became thick, I took it off. A great and satisfying curry to eat with hot rice was ready.

In the land of abroad, local vegetables or familiar ingredients may not always be easily available. But whenever I get it, this small cooking arrangement reminds me of the cooking done by my parents in my country. Even in the midst of a hundred hardships, this one plate of hot rice and fish soup made by my own hands seems to take away all the fatigue of the whole day.
