Black pepper is called the king of spices.
Plant Structure and Characteristics
The black pepper plant is an evergreen climber that requires a support structure or a tree to climb.
Leaves: Its leaves are dark green, glossy, oval-shaped, and slightly pointed at the tip.
Flowers: The plant produces small, simple white flowers arranged in hanging clusters known as spikes.
Fruit (Berries): Following the flowers, small, round fruits develop in these clusters; these are known as peppercorns. They are green when unripe, turn red upon ripening, and become black and shriveled when dried.
How is Black Pepper Produced?
Interestingly, different types of pepper are produced from the fruit of the same plant:
Black Pepper: When unripe green fruits are harvested and sun-dried, oxidation causes their skin to turn black and harden, resulting in traditional black pepper.
White Pepper: Fully ripened red fruits are soaked in water to remove the outer skin, and the inner seed is dried; this is known as white pepper.
Climate and Cultivation Method
The black pepper plant requires a tropical and humid climate to thrive.
Temperature: A temperature range of 20°C to 30°C and high humidity are considered ideal.
Soil: It requires fertile, loamy soil rich in humus with excellent drainage. Waterlogging can cause the roots to rot.
Support: Cultivation requires the support of a tree—such as areca nut or mango—or a sturdy structure for the vines to climb.
