Guys I hope you are all well. And enjoying the beautiful moments of your life. I am also perfectly good by the blessings of Allah. And today I am going to share a delicious and special experience with you all. For this week’s challenge I have chosen “Afghan Handi”. Which is a famous and unique dish from Afghanistan. This dish is quite different from other handis. Due to its creamy texture and mild taste. Guys I have always been fond of trying foods from new cultures. So I thought of trying something new this time. I hope you like my choice. 😊
Afghani Handi is usually prepared in a clay pot. Which makes its taste even more natural and delicious. The special thing about this dish is that it does not use many spices. But it is cooked with very simple and mild spices. Due to this simplicity its taste seems unique. Some Afghani Handi recipes include tomatoes while some do not. But I have added tomatoes in this recipe of mine to make the gravy more delicious and flavorful. I did not have a clay pot. So I prepared it in a pan, but despite this. It turned out to be very tasty and flavorful.

| 7 | Black pepper powder | 1 teaspoon |
| 8 | yogurt | 1 small cup |
| 9 | Cream | 3 tablespoon |
| 10 | Ginger & Garlic paste | 1 tablespoon |
| 11 | Green chilli & Coriander | According to taste |
- In the first step I put oil in a pan and placed it on the stove and let it heat on low heat. After that I added long and thinly sliced onions to it. After adding the onions I cooked them on low heat for about 4 to 5 minutes. I cooked the onions only until soft and did not brown them. So that their mild and natural flavor was retained.
- In the second step I added the chicken to the same pan. After adding the chicken. I fried it on low heat for about 5 minutes. I cooked the chicken well but did not let its color change. I did not brown it but kept it slightly white. When the chicken became soft. I added a tablespoon of garlic paste to it and mixed it well. And fried it for some time so that its aroma came out well.
- Then I added a small cup of well beaten yogurt to it. Before adding the yogurt I turned the stove to low heat, because adding yogurt on high heat can cause it to burst and spoil its texture. So I carefully added the yogurt on low heat. Then I mixed it well so that the yogurt and chicken were well combined. After that I covered the pan with a lid and let the chicken cook well in the yogurt. So that the taste would be even better.
- When the chicken was well cooked in the curd. I added long chopped green chillies to it. After adding the green chillies, I mixed it lightly. Then it was time to add the tomato paste. So for this I boiled two large tomatoes first. After boiling I peeled them and then blended them well to make a smooth paste. After that I added this tomato paste to the pan. This thickens the gravy of the handi and improves its taste.
- After that I added all the remaining spices to it. I have already given the complete list of all the spices in my list. So you can add or subtract them according to your preference and taste. The special thing about Afghani Handi is that neither red chilli is added nor turmeric is added. It is prepared with very simple and mild spices. That is why its taste is very unique and delicious. I added coriander powder and a little hot spice powder to it and mixed them well. So that all the flavors blend well with each other.
- Finally it was time to give the final touch to the Afghani Handi. To make it taste more delicious and creamy. I added three tablespoons of cream to it. Adding cream not only makes the Handi soft and thick but also makes it taste very good. After that I garnished it with coriander leaves. Then I covered the pan with a lid and kept it on low heat for about 5 minutes so that all the flavors blend well. After that our delicious and fragrant Afghani Handi was ready.

Afghani Handi is a famous dish that belongs to Afghanistan. Afghanistan is a country where food is simple but very tasty. The people there do not like spicy food. But rather they value natural flavors. Afghani Handi is also a beautiful example of this tradition. This dish is usually made with chicken or meat yogurt cream garlic and mild spices. It does not use tomatoes and many chilies due to which its color is white and the taste is soft and mild. This is what makes it different from the cuisines of other countries. Food has a very important place in Afghan culture. The people there are famous for their hospitality. And when a guest comes. They are served special and good food. Afghani Handi is also often made for guests. So it is not just a meal but also an expression of love and respect. This dish also reflects the environment and lifestyle of Afghanistan. The weather there is mostly cold. So creamy and energizing foods are preferred. Afghani Handi also gives strength to the body. And the yogurt and cream in it make it more nutritious. In addition this food is also a symbol of simplicity. The people of Afghanistan like to live a simple life. And their food also reflects this simplicity. Despite having less spices in Afghani Handi. It tastes very good which shows that even with less ingredients great food can be made.
In conclusion we can say that Afghani Handi is not just a dish but a cultural identity. It reflects the hospitality simplicity and traditions of the people of Afghanistan.

Afghani Handi and Pakistani Chicken Handi are both very delicious and famous dishes. But there are significant differences in their taste and method of preparation. First of all if we talk about similarities both dishes are made with meat or chicken and both are cooked in a handi. Apart from that both dishes are usually eaten with naan or roti and both are made on special occasions or for guests. In this sense both these dishes are a symbol of hospitality. Now if we talk about the difference. The biggest difference is in their taste. Afghani Handi has a mild creamy and soft taste. While Pakistani Chicken Handi is more spicy sharp and pungent. Tomatoes red chillies hot spices and oil are used more in Pakistani Handi. Which also makes its color darker and its taste more intense. On the other hand Afghani Handi uses mostly yogurt cream and mild spices due to which its color is white and its taste is mild. This difference reflects the cuisine of the two countries. Pakistani food is generally more spicy. Because the people here like to eat fast and spicy food. While Afghan food is simple and based on natural flavors. Because the people there use less spices. Another difference is that Pakistani handi has more oil and ghee. While Afghan handi is relatively mild. Therefore Afghan handi can also be considered a bit healthier.
In conclusion we can say that both dishes are special in their own place. Afghan handi shows simplicity and softness. While Pakistani handi shows the power of flavors and spices. Both dishes present the beauty of their respective cultures.

Afghan Cuisine has many rich flavor recipe, you share the origin and history of recipe in very interesting way.
