Let’s be entirely honest with each other: nobody actually understands what disodium guanylate or pyridoxine hydrochloride are, yet we all stand in the grocery store aisle squinting at the back of cereal boxes with the intense concentration of a nuclear physicist defusing a bomb.
I caught myself doing this yesterday. I was holding a box of crackers that promised “All-Natural Wholesome Goodness,” staring at the fine print as if I possessed a degree in organic chemistry. A woman standing next to me noticed, cleared her throat, and nodded solemnly at the ingredient list, whispering, “Yeah, gotta watch out for those emulsifiers.”
We didn’t know each other. Neither of us had any earthly idea what an emulsifier actually did to our internal organs, but in that moment, we were bonded by the shared performance of health consciousness.
It is a universal ritual. We pick up a pack of cookies that are 98% sugar, palm oil, and crushed dreams, turn them over to read the back, nod sagely at the word “Niacinamide,” and put them in our basket anyway. We aren't checking for allergens or nutritional value; we are just checking to see if the corporation selling us junk food had the decency to use words we can't pronounce, which somehow makes us feel like we are making informed adult choices.
Next time you're at the store, just remember: everyone around you is faking it too. Now, if you'll excuse me, I have to go finish a bag of chips while intensely Googling what "soy lecithin" is for the fifth time this month.
