Hi guys it's my pleasure to participate in this contest, today I will be showing you one of our traditional dish that is not common but a very rare meal.

It is called Afere Ndise a scientific name is Cucurbita maxima

We Nigerian, have a lot of leafs that can be used to prepare a soup and that's why we have a lot of traditional dishes. Recently, some of this leaf is being forgotten because people do neglect the method of preparation of some food. When asked, they said the taste of the food is not appropriate for them or the method of preparation is boring but then there are some cultural heritage we should protect one of it is dishes

Ndise is a soup and can be eaten with any swallow of your choice, it is very delicious and comes with a lot of health benefits.

Now it has a cooking technique that makes it different from other food in my country, it is that you do not add palm oil to the soup, it is cooked without oil because if you add oil, it will separate,so because of this, it is cooked without oil and it's so nice.

Let me go on and share the soup recipe and steps in preparing it.

Steps

I washed all my washable ingredients thoroughly till clean such as the leaf, okro, fish, Seasoned the fish and extracted the stock for the soup.

Why did you choose this topic for your video vlog, and what makes it special to your local culture or personal experience?

I have passion for showcasing our traditional dishes therefore, exploring the ones I've not eaten for a long time gives me the motivation to choose this topic for my video vlog so I can teach people how to cook this food and also remind them of a meal like this.

It is not mostly eaten in my place, it's a food that we usually eat when I was small and then this modern era is gradually removing food like these.

So I really wish bringing back our olden days food or will I say a typical local meal will help protect most of our local food and culture.

What were the most interesting moments or challenges you experienced while recording this vlog?

My tripod stand got spoilt so I couldn't leave the phone on it so as to have a full recording of this food from both the preparation and others. So I have the challenge of holding my phone with one hand while showing how I cooked the food so this was actually challenging while making the recording.

What new knowledge or experience did you gain while creating this video, and what would you like viewers to learn from it?

While creating this video, I truly appreciate our traditional foods and their unique cooking methods which makes them really special and outstanding. I was reminded that without oil some soups can still be eaten and they are delicious.

I also asked myself how all this leaf was being noticed and how their method of preparation was realised which makes it unique.

Then I also learn that simple, natural ingredients can still produce a very rich, healthy and delicious tasty meals.

Lastly, I improved my multitasking skills, when I have to be cooking and recording at the same time with one hand.

For my viewers, I will like them to learn that our local dishes are valuable and should not be forgotten or neglected. Irrespective of the fact that the preparation method may seems different or old-fashioned to anyone, it still carries a cultural meaning and much health benefits. I also want my viewers to see that cooking can be enjoyable and worth exploring while learning new things at the same time.

Based on your experience, would you recommend others to explore this cooking style? Explain the reason for your recommendation.

Yes, I would highly recommend others to explore this cooking method for Afere Ndise. It is really nice, the greeny colour it gives the soup shows how healthy the leaf is. This soup is not common, you can't even see it in local restaurants unless you order for it. So the soup is unique and it needs to be eaten by all to have the experience.

So I strongly recommend it to everyone, explore and have your own taste of Ndise soup.

We need to preserve our cultural heritage, there are stories behind some certain meals that we should not miss, so we need to keep this food alive by eating it, teaching our children about this stories behind each food, teaching them the cooking methods.

By doing these, we will continue to pass on our cultural heritage to the next generation and it will not be forgotten.
